I feel mah-velous

Dinner last night:

Swai - seasoned w/ sea salt, white pepper, and some Old Bay - pan seared in olive oil for about 3 minutes on each side, then baked on 350 for 10 min w/ a little squeeze of lemon

Couscous - whole wheat w/ sauteed red peppers & onions, fresh parsley & cilantro

Asparagus - blanched for about 5 min, then sauteed in olive oil w/ onions...

Verdict: Delish. Will definitly do again. Start to finish - 40 minutes, mostly chopping veggies

Today's Eats:

Breakfast - green machine

Lunch - spinach salad w/ chickpeas, red peppers, cous cous, hummus & a baked sweet potato

Snack - carrots w/ hummus & grapes

Dinner - undecided...
